bunny cookies

these cookies are chewy snickerdoodle cookies that are shaped as a bunny! i made these sugar cookies for my friends 21st birthday because she loves bunnies! these snickerdoodle cookies require no time in the fridge, making them a quick and easy dessert to enjoy. these cookies are perfect for easter and spring.

ingredients:

  • 3 cups all purpose flour (375 grams)
  • 2 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • 1 1/2 teaspoon cinnamon
  • 1 cup salted butter
  • 1 1/3 cup granulated sugar – softened (267 grams)
  • 1 egg + 1 egg yolk
  • 2 teaspoons of vanilla
  • for the topping: 1/3 cup sugar (70 grams) , 1 tsp cinnamon
  • for decorating: 1/4 cup dark chocolate, 1/4 cup white chocolate, pink food coloring, piping bag

Recipe:

  • preheat over to 375 degrees
  • line baking tray with parchment paper
  • whisk dry ingredients together (flour, cream of tartar, baking soda, cinnamon) in a bowl
  • using a mixer, cream butter and sugar together until creamy on medium speed. add in eggs and vanilla and cream.
  • pour dry ingredients into wet ingredients and mix together with a spatula
  • roll cookies into different sized pieces , 1 big piece for the head, 2 small pieces for the ears
  • roll each piece into cinnamon sugar then shape into a rabbit
  • bake at 375 degrees for 10 minutes
  • allow cookies to cool completely
  • melt chocolate into microwave and separate dark chocolate into a piping bag
  • take part of the white chocolate and dye pink with red food coloring
  • pipe eyes, ears, hearts, and nose onto rabbit as seen in the photo above
  • enjoy!
